Wash, dry and hull the strawberries, use a mixer or a vegetable mill to mash. Bring the water and 7 oz sugar to a boil, remove from the heat as soon as this syrup boils, add to the mashed strawberries. Allow to cool. Beat the egg whites stiff, add the remaining sugar, beat a little again to mix. Heat the milk in a shallow but large saucepan. When simmering, slip balls of stiffly beaten egg whites which you have picked up with a large spoon, cook for 20 seconds, turn delicately, then cook for a further 10 seconds. Drain with a skimmer and allow to cool on a cloth. Spoon some strawberries into a bowl, top with the snowballs. Serve chilled.
